Recipe for grilled zucchini corn tacos with bean puree and pickles

Now the fun part: layering the flavors. Steam or grill your tortillas until they are soft and pliable. Add two or three tablespoons of fried beans and distribute them in a thick circle towards the center of each tortilla. Add a large spoon of chopped vegetables, a few pickled chilies and, if you like, some crumbled or grated cheese, a dash of lime, and a few sprigs of coriander. If you’re serving this to a small amount, let each build their own – layer more of the flavors they like and less of the flavors they don’t. This is also part of the art of taco: You can prepare it however you want.
